Fluffy Matarghasti Dhokla

This steamed tasty food is prepared from chick pea flour mixed with sweetness of pea making excellent for breakfast or tea-time food. Accompanying it should be green cilantro and a hint of mustard seeds to give the cuisine a Moroccan feel!

Ingredients

  • 2 cups chickpea flour (besan)
  • 1 cup fresh green peas, pureed
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger paste
  • 1 tablespoon green chili paste
  • 1 teaspoon lemon juice
  • 1 teaspoon baking soda
  • 1/2 cup water (adjust as needed)
  • 1 tablespoon oil (for greasing)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon sesame seeds
  • Fresh cilantro, for garnish
  • Salt, to taste


Steps

  1. In a mixing bowl, combine chickpea flour, green peas puree, turmeric powder, ginger paste, green chili paste, lemon juice, and salt.
  2. Gradually add water to make a smooth batter, ensuring there are no lumps.
  3. Add baking soda to the batter and gently fold it in; let it rest for 10 minutes.
  4. Grease a steaming tray or a round cake pan with oil.
  5. Pour the batter into the tray, spreading it evenly.
  6. Prepare your steamer (or a deep pot with water) and bring to a boil.
  7. Place the tray in the steamer and steam for about 20-25 minutes, or until a toothpick comes out clean.
  8. Meanwhile, in a small pan, heat a little oil and add mustard seeds and sesame seeds until they splutter.
  9. Once the Dhokla is ready, remove from the steamer and let it cool slightly.
  10. Cut into squares, drizzle with the tempering, and garnish with fresh cilantro.
