Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- 1 teaspoon garam masala
- 1 cup mashed potatoes (cooked)
- 1 cup green peas (cooked and slightly mashed)
- 1 small onion (finely chopped)
- 2 tablespoons oil
- 1 tablespoon ginger-garlic paste
- ½ teaspoon red chili powder (adjust to taste)
- ½ cup milk
- 2 large eggs
- Fresh cilantro (for garnish)
Steps
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, combine the flour, baking powder, salt, cumin, coriander, and garam masala. Mix well.
- In a separate pan, heat oil over medium heat. Add onions and sauté until translucent. Add ginger-garlic paste and cook for another minute.
- Stir in the mashed potatoes, green peas, and red chili powder. Cook for 3-4 minutes until well blended. Let cool.
- In another bowl, whisk together the milk and eggs until combined.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Gently fold in the potato-pea filling.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
- Remove from the oven, let cool slightly, and garnish with fresh cilantro before serving.
