Ingredients
- 4 cups fresh sweet corn kernels (about 6 ears)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese (optional)
- Lime wedges for serving
Steps
- In a large skillet, heat olive oil over medium heat.
- Add the sweet corn kernels and sauté for about 5 minutes, stirring occasionally, until they begin to lightly caramelize.
- Sprinkle chili powder, cayenne pepper, garlic powder, salt, and black pepper over the corn. Stir well to combine and cook for another 3-4 minutes.
