Pineapple Curry

Ingredients

  • 2 cups butternut squash, peeled and diced
  • 1 cup fresh pineapple, chopped
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 bell pepper, sliced (red or yellow)
  • 1 cup vegetable broth
  • Fresh basil or cilantro, for garnish
  • Cooked jasmine rice, for serving

Steps

  1. In a large pot, heat a splash of vegetable oil over medium heat.
  2. Add the minced garlic and ginger, sautéing until fragrant (about 1 minute).
  3. Stir in the red curry paste, cooking for another minute to release its flavors.
  4. Add the diced butternut squash and bell pepper, cooking for 5-7 minutes until slightly tender.
  5. Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle simmer.
  6. Stir in the chopped pineapple, brown sugar, soy sauce, and lime juice.
  7. Let the curry simmer for 15-20 minutes until the squash is cooked and the flavors meld together.
  8. Serve hot over jasmine rice, garnished with fresh basil or cilantro.
