Spicy Sprouted Moth Bean Misal Pav

Ingredients

  • 1 cup sprouted moth beans
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 medium potato, boiled and cubed
  • ½ cup chivda (spicy snack mixture)
  • Fresh coriander leaves, for garnish
  • 8 pav (bread rolls)


Steps

  1. Rinse the sprouted moth beans and set aside.
  2. In a large pan, heat oil over medium heat, then add mustard and cumin seeds.
  3. Once they splutter, add chopped onions and sauté until golden brown.
  4. Stir in the ginger-garlic paste and green chilies, cooking for a couple of minutes.
  5. Add the chopped tomatoes, turmeric, red chili powder, and salt. Cook until the tomatoes soften.
  6. Mix in the sprouted moth beans and a cup of water. Simmer for 20 minutes, stirring occasionally.
  7. Once the mixture thickens, add garam masala and cubed potatoes. Stir well and cook for another 5 minutes.
  8. In a separate pan, lightly toast the pav until golden brown.
  9. Serve the misal hot, garnished with chivda, chopped coriander, and additional onions. Enjoy with toasted pav on the side.
