Tangy Tofu with Vibrant Sauce

Savor this Sweet and Sour Tofu meal that consist great bites of crispy tofu cubes, coated in an appetizing sweet and sour gravy. This delightful dish integrates a wonderful pineapple, bell peppers and hint of ginger, whereby a sweetness and tanginess perfectly blends. This dish when prepared and served over fluffy rice is perfect as a simple home dinner which benefits everyone or can be presented as quite a grand dinner party dish!

Ingredients

  • 1 block (14 oz) firm tofu, drained and pressed
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup pineapple chunks (fresh or canned)
  • ¼ cup soy sauce
  • ¼ cup rice vinegar
  • ¼ cup brown sugar
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • ¼ cup green onions, chopped


Steps

  1. Cut the pressed tofu into bite-sized cubes and sprinkle with cornstarch, ensuring they are evenly coated.
  2. Heat vegetable oil in a large skillet over medium heat and add the tofu. Fry until golden and crispy on all sides, about 10 minutes. Remove the tofu and set aside.
  3. In the same skillet, add the diced bell peppers and sauté for 3-4 minutes until they soften.
  4. Add the pineapple chunks, garlic, and ginger, and cook for an additional 2 minutes.
  5. In a bowl, mix together soy sauce, rice vinegar, brown sugar, and sesame oil. Pour this sauce over the sautéed vegetables.
  6. Bring the mixture to a simmer and cook for about 5 minutes, allowing the sauce to thicken slightly.
  7. Return the crispy tofu to the skillet, tossing to coat with the sauce. Cook for another 2-3 minutes.
  8. Garnish with chopped green onions before serving. Enjoy over rice or noodles!
