Ingredients
- 1 block (14 oz) firm tofu, drained and pressed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup pineapple chunks (fresh or canned)
- ¼ cup soy sauce
- ¼ cup rice vinegar
- ¼ cup brown sugar
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- ¼ cup green onions, chopped
Steps
- Cut the pressed tofu into bite-sized cubes and sprinkle with cornstarch, ensuring they are evenly coated.
- Heat vegetable oil in a large skillet over medium heat and add the tofu. Fry until golden and crispy on all sides, about 10 minutes. Remove the tofu and set aside.
- In the same skillet, add the diced bell peppers and sauté for 3-4 minutes until they soften.
- Add the pineapple chunks, garlic, and ginger, and cook for an additional 2 minutes.
- In a bowl, mix together soy sauce, rice vinegar, brown sugar, and sesame oil. Pour this sauce over the sautéed vegetables.
- Bring the mixture to a simmer and cook for about 5 minutes, allowing the sauce to thicken slightly.
- Return the crispy tofu to the skillet, tossing to coat with the sauce. Cook for another 2-3 minutes.
- Garnish with chopped green onions before serving. Enjoy over rice or noodles!
